Musings from a foodie…

For only the second time in 18 months, I had the opportunity to travel – this time to Nashville, Tennessee. I’ve never thought of Nashville as a foodie mecca but I was surely taken aback by my experience at Etc. [ * * * * * ]. It’s the second restaurant for Chef/Owner, Deb Paquette. She ferries back and forth between Etc. and Etch. First, Etc. is located near a mall and – prejudice aside – most restaurants near malls are meant for fast, consistent and quick food experiences. Etc. is clearly the exception of an outstanding restaurant adjoining an OK mall.

The reason for my high evaluation is not only the excellent – if not outstanding food preparation – but also the presentation of each selection which was wonderful to say the least!! The Roasted Beet, Berry and Bacon Salad was absolutely wonderful. It was a combination of flavors spiced with ginger, fennel and orange vinaigrette topped with blue cheese (my personal favorite). The Chicken and Chicken was another amazing presentation presented as a smoked chicken mascarpone tart with caramelized onion, Manchego cheese, covered in a mushroom sherry sauce over a bed of arugula and fennel. Oh la la! We got most of it home for son who asked that we “pick something” for him as recovery from a long day of work. But, I ordered the Pork Loin sauteed in a hibiscus rhubarb mole and served with a sweet potato enchilada and peanut ginger pesto sauce. Again, outstanding both in terms of taste and presentation. If you have the opportunity to visit Nashville, you will definitely want to check out Etc. Restaurant, 3790 Bedford Avenue, Nashville, TN, (615) 988-0332, www.etc.restaurant. The wait staff informed me the presentations and style were comparable at Etch Restaurant near the downtown area of Nashville. Mostly likely, it’s also a great place since the Chef/Owner is common to both! Go for it…
