When it’s a chilly or even cold morning and you wake up thinking a robust breakfast is on the horizon, consider Biscuits and Gravy. I have my own thoughts on the gravy portion but if you want biscuits [ * * * * * ] that will warm your heart consider this one that comes from Mom’s recipe box which I was successful in squirreling away with sweet talk one day a bunch of years ago. It’s my go to source for comfort food. I’ve made one slight but significant change. Notice that there is no cream. Instead use yoghurt. I think it’s far better…

Preheat oven to 450 degrees. Then, take 3 cups of flour, 5 tbsp honey, ¼ tsp of salt, 4 tsp baking powder, 1 tsp cream of tartar, 1 stick of butter cut into 1/8  x 1/8 inch sized squares, 1 cup of yoghurt, ¼ cup of water and 1 egg. The secret of the recipe is the “cold” butter. In fact, you should place the slices in the freezer after cutting to chill them even more. Combine all of the dry ingredients. One other thought. I use special Greek honey from the Island of Kythera. It has a special taste derived from the flowers on this very “Greek” island of the Peloponnese. 

Mixing the dough with your hands if the best approach for combining the ingredients – after washing your hands, of course 😊. When the dough has been mixed, take it and place onto a floured surface, knead it and flatten the dough out. Then, pat the dough into a large flat, square shape – about 1” thick. Cut the dough into small 1 and ½ inch squares (roughly). Place on a baking pan and pop into the pre-heated oven for about 14+ minutes. When they are done, brush with butter or honey – whichever you prefer. Now on the gravy side, I have my bias but I defer to your decisions…
